Make it: Fruit Leather Roll Ups

Bring on the fruit leather!  My girls love this stuff and love to help me make it.  It’s SUPER easy, mighty tasty, and only has 3 ingredients – Fruit, Sugar, and Lemon Juice!  The great thing is that you can create your own combinations and do it all organic.  I recently made a strawberry-apple combo and it was awesome.  Trust me, it won’t be only the kiddos eating it!

Ingredients

  • 1 1/4 pounds chopped fruit (see below for suggested flavors)
  • 3/4 cup sugar
  • 1 to 2 tablespoons fresh lemon juice

Directions

Preheat the oven to 200 degrees F. Combine the fruit and sugar in a blender. Add the lemon juice to taste (use 2 tablespoons for apples or bananas) and puree until smooth.

Transfer the pureed fruit to a medium saucepan and bring to a simmer over medium-high heat. Reduce the heat to medium low and cook, stirring occasionally at first and then more often toward the end, until most of the liquid evaporates and the mixture is very thick, 35 to 45 minutes. Be careful: The mixture may splatter.

Line a 12-by-17-inch rimmed baking sheet with a silicone mat or nonstick foil. (Note:  if you use regular foil, you’ll have to work a little to take it off the back.  I would use parchment or simply the silicone mat.) Use an offset spatula to spread the fruit on the mat or foil into a thin layer. Bake until barely tacky, 3 hours to 3 hours, 30 minutes.

Transfer the baking sheet to a rack and let the fruit leather cool completely. Peel off of the mat or foil. If the leather is still moist on the underside, return it to the oven, moist-side up, until dry, about 20 more minutes. Lay the leather smooth-side down on a sheet of wax paper and use kitchen shears to cut it into strips on the paper. Roll up the strips and store in zip-top bags for up to 1 week.

Suggested Flavors and Combinations:

Plum: 5 medium, unpeeled, chopped

Peach or nectarine5 medium, unpeeled, chopped

Apple: 3 large (Gala or Granny Smith), peeled and chopped

Strawberry4 cups, hulled and chopped

Raspberry5 cups

Grape: 3 1/2 cups (preferably Concord), seeded if necessary

Banana: 5 medium, peeled

Mango: 2 large, peeled and chopped

Raspberry-Vanilla: 5 cups raspberries plus the seeds from 1/2 vanilla bean

Strawberry-Banana: 3 cups strawberries, hulled and chopped, plus 2 medium bananas, peeled

Apple-Ginger: 3 large apples, peeled and chopped, plus 1 1/2 teaspoons grated ginger

Spicy Mango: 2 large mangoes, peeled and chopped, plus 1/8 teaspoon each salt and cayenne pepper

Art + Walk + Little Italy = Heaven

When you combine an art festival with one of my favorite San Diego neighborhoods, you get one happy mama!  This past weekend was Art Walk, a fine arts festival in Little Italy.  If you don’t start salivating from the amazing food, you surely will from the art and creativity that oozes from this place. Yes, Yes, Little Italy is dripping with flavor!  Therefore, we decided to pack up the nuggets and check it out {we almost turned around because parking was THAT bad!  However, we snaked a great spot and we were on our way. Whew!}

One of my favorite pieces of furniture that we came across was designed by the creative mind of Gustaf A. Rooth of Barrelly Made It and Planet Rooth Design Haus.  Rooth, brewing up a perfect blend of art and function, created furniture out of wine barrels.  Hmmm, eco friendly, funky, and functional…Neither Londyn nor I could get enough.  Check her out in the Barrelly Made It Wine Chair!  I think it’s just her size. :)

One of the other stoppers for me was a display of work by Thomas Barbey, a photographer and photocollage artist.  His work both inspired and excited me, yet completely scared me at the same time. :)   I seriously, want to peek inside this guy’s head to see what’s going on.  But that’s another story. Anyway, Barbey has some amazing stuff.  To me, good art, whatever genre, is something that you can stare at over and over … and his art does just that!

Happy Anniversary!

HaPpY AnNiVeRsAry, Mr. Urban Nugget! ;) I can’t believe it’s already been FOUR years!  Well, actually, let’s think about this…2 babies, a dog, moving 3 times, and starting a new business…I take that back.  It feels like 10! :)

Apparently, fruit/flowers and the color green are the themes for the BIG 4 year mark.  Therefore, the nuggets and I decided to take a little trip to our favorite street florist in the South Park area.  It was so fun!  The girls helped me pick out 4 types of flowers (one for each year) and put them in a little arrangement that had sort of a soft masculine feel.  After all, these are for him too!

But the central concern is present-tense lust and heartache, which this spirited band translates into a fine drunk-clogging soundtrack. But on “Slow It Down,” which does just that, you hear a deeper, more haunted sound, suggesting there’s more here than meets the beer.

Easter Wrap Up!

The Easter Bunny has come and gone but here are just a few snap shots from our day.  Amazing friends and family, easter egg hunts, and an 80 degree day…not too shabby San Diego.  Not at all…

Bright colored Easter Cupcakes! If you haven’t taken a peek at “What’s New, Cupcake?”, a book dedicated to artsy little cupcakes, then you should!  It holds pages of different cupcake ideas like the flower cupcake at the bottom of this image.  I am not going to lie, some recipes require a lot of patience.  Like a lot…a lot, a lot.  However, don’t fear, there are some that are geared towards us instant gratification folk!

Cinnamon Rolls…if you don’t like ‘em, we need to talk.  Seriously, there might be something wrong with you. ;)  These are so tasty! I think only a few little morsels remained on the plate. Click here for the nummy recipe. (FYI – I made mine without hazelnuts and it was still amazing)

Ahhh, this is one tired nugget!  Londyn gave Easter her best shot. Tender little moments like this get me every time.  Hope your Easter was as wonderful as mine! :)

Woo Wee! Camping received a little makeover and I’m definitely liking its new style.  Not quite the kind of camping I had when I was a kiddo but who cares. Mama’s a fan!

I came across these photos when I was planning our summer camping trip and let’s just say the entire vision has changed.  Let’s Glamp!  Whether its renting an RV, Airstream, or camping out at a luxurious camping resort, it’s destined to be a good time.  Good friends & family, delicious food, and the outdoors…you can’t go wrong!

Happy Birthday Nugget!

Can you believe it?  My oldest nugget turned 3 last week!  How did this happen?  And honestly, it’s more like 3 going on 18. The little tyke wears my heels better than I do! {sigh}… Anyway, when I asked Lily what kind of birthday party she wanted she was set on a flower theme, so we went Daisy!  {que the yellow}  Instead of doing yellow and white, I decided to throw in some black for a little more contrast and a lot more drama.  I love the way the yellow plays off the black and how the striped table-cloth creates a bold platform to layer all the goodies!   We ended up BBQing, so this was our dessert table.  Pretty fun!

Ahhh, Color! I swear, the right set of colors can brighten any mood or any room for that matter. I absolutely love the use of colors in this kids room below by Tracery Interiors. Building upon the white background, allows these bold colors to stand out and compliment each other rather than compete for your attention.  The result, a clean, fresh, and bright feel.

And check out these colorful vintage step stools from Circle Creek Home that I spied on Etsy. They are sure to brighten up any kids area! Great price range too!

Greening Your Skin Care

Have you ever really paid attention to what’s in your shampoo, body lotion, perfume, make up, or deodorant? There was a time when I would just shrug my shoulders and think “Smells and looks good to me!”  After all, they wouldn’t put anything bad for you in there, would they? Think again.  A great article from Mail Online stated that “research by Bionsen, a natural deodorant company, found that the average woman’s daily grooming and make-up routine means she ‘hosts’ a staggering 515 different synthetic chemicals on her body every single day.” Say what?!  Now, that’s a lot of s#*t, if you ask me!  Check out this diagram that I first found circling facebook.  Pretty insightful.

While I was pregnant with my nuggets, I wanted to become very aware of everything that I was putting in and on my body while I was pregnant.  It is mind-blowing all the potentially harmful ingredients that are in your daily regimen. For example, parabens can be found in shampoos, commercial moisturizers, shaving gels, cleansing gels, personal lubricants, topical pharmaceuticals and toothpaste, and may be used as food additives.  There are studies both for and against them but many studies have pointed out that parabens are hormone disrupters linked to breast cancer and infertility.

Another one to watch out for is Phthalates.  Phthalates, used regularly in cosmetics, skin care (often labeled at “fragrance”), and used to soften plastics, are linked to hormonal changes in baby boys, birth defects, miscarriages, and thyroid irregularities.  For more info on that click here.

With all that being said, I bought an awesome book that teaches you about what is in your skin care, how to make your own (at home), and in the greenest way possible.

I love this book by Julie Gabriel, holistic nutritionist and founder of Petite Marie Organics.  Check out her blog.  It has great recipes and articles!

Anyway, this book is so fun!  I have made my own organic toners, face wash, and scrubs.  With so many goodies, like Red Carpet Masks, Sun Savers for skin & hair, and even mouthwash, it’s hard to choose what to make first!  Among my favorites are the Sweet Dreams Facial Oil, Age Rewind Skin Toner with Lipoic Acid (a well studied antioxidant that protects your skin from the elements), and the Sugar Mommy Scrub (see below).  I even use the Sugar Mommy Scrub on my girls and they love it. However, they always manage to get it in their hair and they come out looking a tad greasy! ;)  Regardless, your skin will love you afterwards! And the best part is…you know exactly what you are putting on your body!

Sugar Mommy Scrub (Green Beauty Recipes)

1/2 c. Brown Sugar

1/2 c. Olive Oil

5 drops Rose Oil (or if you want it a little more masculine, I used Rosemary oil)

5 drops Vanilla Extract.

Note:  I added more rose oil because the olive oil is a bit earthy.  So, add the amount essential oil to your liking.

Happy Valentine’s Day! Hope you are feelin’ the LoVe today!  Below is my favorite super quick cream cheese frosting recipe from Food Network.  (You’ll say goodbye to store-bought after you get a taste of this.  I promise!)  Add some vibrant food coloring and you’ll get something like my cupcakes above!  Muah!

Cream Cheese Frosting:

Ingredients

  • 4 ounces unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract.

Tomato-Avocado-Basil Toast.

My most favorite breakfast EVER!  Simple, fairly quick, super healthy, FRESH, and mighty tasty!  Give it a try.  I am 99.9% sure you’ll be a fan…unless you are allergic to something in it or have issues with certain veggies.  In that case, no fun for you!

Sometimes, I replace the avocado with hummus or leave out the tomatoes.  It all depends on what I have on hand.  So, play around with the combinations.

Tomato-Avocado-Basil Toast:

Slice of your favorite bread  (I like the Trader Joe’s Cracked Wheat Sourdough Bread)

Earth Balance Organic Buttery Spread (You can use butter or any other buttery spread you choose.  You can also leave this ingredient out all together.)

1/2 of an avocado

Tomato slices

Chiffonade 2 large leaves of basil or use dried basil

Lemon pepper

Sea salt

Directions:

- Toast Bread and spread with Earth Balance Butter Spread.

- Take 1/2 of an avocado with the skin still on, turn it upside down, and squeeze out the avocado on to your bread.  Spread across bread and even out chunks.

- Add tomato slices and basil

- Sprinkle with Sea Salt and Lemon pepper

Variation for the nuggets:  My girls will only eat it without the tomatoes and basil.  They pick them off.  So, it’s basically avocado toast for them and they love it!

Ah, my latest addiction…JUICING!  It’s fun, fresh, and my nuggets LoVe it!  I even make their popsicles with it.

Above is a picture of my morning ritual. It’s only been 4 weeks but I can already FEEL and SEE a difference.  We’ve all heard how great juicing is for you but how good, you ask?  Check out some little tid bits below to learn a little more.

Main Reasons To Juice: 

  1. Juicing helps you absorb all the nutrients from the vegetables. Juicing requires hardly any digestion which allows the nutrients to get into your system quickly.
  2. Juicing allows you to consume an optimal amount of vegetables in an efficient manner. Juicing requires a lot of fruits and veggies.  More than you probably normally eat.  Therefore, you’re consuming a dense amount of vitamins, minerals, and other plant-based nutrients in one sitting.
  3. You can add a wider variety of vegetables in your diet.  I am a creature of habit and I tend to eat a lot of the same types of salads, fruits, veggies, etc.  Juicing allows you to venture outside of that comfort zone and consume fruits and veggies that you wouldn’t normally touch.

Recipes:

Below are some of my favorite recipes. I found most of them from HealthMad and they are de-lic-ious!  And juicing doesn’t have to be all work, no play.  We made some pretty tasty Bloody Mary’s on New Years Day!  So, have fun with it!

 

The Body Cleanser (My Favorite!):

3 parts apple

1 part ginger

3 parts carrot

(Sometimes, I add the juice of one small peeled lemon and you can’t even tell its there!)

Pour over ice

 

Skin Cleanser:

2 parts apple

1 part carrot

1 part tomato

Pour over ice

 

The Greenie:

2 parts apple

2 parts pear

1 part greens (like spinach, chard, kale, or a mix of them all.)

Pour over ice

 

Bloody Mary:

4 med. tomatoes

2 sticks of celery

1 red bell pepper (seeded and stem removed)

1/3 cup vodka

Pour over ice

My new love!  I absolutely adore these aprons by Ice Milk Aprons.  I am not sure what I love more, the aprons or the story behind them.  Rooted from the time spent in the kitchen with her grandma, 30 year old, Ashley Leckey Schoenith, started a small apron business that took off quicker than she could have ever imagined.  Ice Milk Aprons’ simple neutral palette is Audrey Hepburn inspired and timeless.  Each apron arrives packaged in a preserves jar with blank recipe cards.  The apron and the recipe cards are meant to be passed down from generation to generation.  …A super cute gift, if you ask me! :)
